Crushed and destemmed straight to press with minimal time on skins to only extract only the faintest of colour, it is then tank fermented cold to maintain the delicate pinot characteristics. This wine has lifted strawberry and cherry blossom aromas with a beautiful blush pink colour from skin contact.
